創發是九龍城無人不識的老字號,七十年代落戶,由陳氏三代合力經營。畫中人正是第三代老闆,陳氏兄弟自小就到飯店幫忙,長大後子承父業打理飯店。店內裝修和格局設計精心,紙皮石牆和水晶吊燈,隱見氣派。甫進門就見創發最享負盛名的「冷檔」,放滿琳瑯滿目的潮州美食,陣容鼎盛,豐儉由人。馬友魚飯、琵琶蝦、滷水鵝等固然貴價;亦備有炆春菜、煎鹹牙帶、花生炆豬尾等價廉菜式。鐵閘作品中,兩兄弟手上捧着創發的招牌菜式:魚飯和凍龍蝦。包羅萬有的冷檔格局在港已碩果僅存,卻是最地道的潮州打冷風味。

Established in Kowloon City in the 1970s, Chong Fat Chiu Chow Restaurant is currently owned by the Chan brothers, the third generation of the founding Chan family. The shutter artwork shows the brothers as children, helping out at the restaurant and holding two of the restaurant’s signature dishes – salted threadfin fish and chilled lobster. When you enter this old-style restaurant, the first thing you notice is the traditional display of cooked food, known as “laan dong” (cold display), where all kinds of dishes – from high-priced items such as salted threadfin fish, flathead lobsters and braised goose, to low-priced items such as braised spring vegetables, pan-fried cutlassfish and braised pig’s tails with peanuts – are laid out for customers to choose from. Although “laan dongs” are not often seen in Hong Kong these days, it’s still the most authentic way to experience Chiu Chow cuisine!
