豐郁濃厚的方榮記沙嗲湯底可說是九龍城名物,無人不曉。方榮記由老闆方永昌的父親,在五十年代由木頭車打冷店起家,兼賣牛雜粉麵,至八十年代才轉營火鍋,搬到現址三舖相連。藝術家Devil在鐵閘作品中以三張照片顯示方榮記的變遷。右方的是老闆方先生指着一張他收藏的五十年代九龍寨城照片,亦是當年方榮記的所在地,約現今九龍城廣場的位置。中間的照片是方榮記起家的本業——粉麵,日間亦繼續兼賣。左方則是馳名的火鍋,最初以炭爐作爐具,後來改以煤氣爐。方先生坦言並非所有食材都適合「打邊爐」,所以方榮記講究的是貴精不貴多,老老實實的味道。

Fong Wing Kee Hot Pot Restaurant is famed for its rich, flavourful satay hot pot broth. Initially established in the 1950s by the current owner’s father, the business started as a humble noodle stall. In the 1980s it was relocated to Hau Wong Road and expanded into a hot pot restaurant. The shutter artwork shows Fong Wing Kee’s legacy in three snapshots. The image on the right shows the owner Mr Fong pointing at a vintage photograph of Kowloon Walled City, where his father’s original stall was located. The centre image shows a bowl of soup being prepared at the noodle stall. The image on the left shows people enjoying hot pot in the current shop. In the past, Fong Wing Kee’s hot pots were served in traditional charcoal stoves rather than the gas stoves used today. Mr Fong has firm ideas about which ingredients are best for the perfect hot pot, and which flavours are best combined with his perfect broth!
